Joe's Chinese Five Spice Turkey Brining Recipe (assuming you know how to cook a regular turkey):
My Grandfather had me believe that a dying comrade gave him his family's turkey recipe at the battle of Guadalcanal during World War II. This was totally untrue, but it's still a delicious recipe.
- One 20lb fresh turkey, cleaned out
- One 15 gallon Rubbermaid storage bin
- Small bag of ice
- 4 gal water
- 1 qt. brown sugar
- 1 qt. kosher or sea salt
- 2 cps. soy sauce
- 4 oranges, halved
- 1 or 2 ginger roots, sliced
- 4 cinnamon sticks
- 1/4 cp. whole Jamaican allspice
- 1/4 cp. star anise (or regular fennel seeds)
Put everything (including oranges) in the largest stock pot you can find and boil until sugar and salt are dissolved. Transfer everything to the large storage bin, add 2 qts. ice cubes and 2 cups soy sauce. Let cool completely. Add un-cooked turkey, cover and refrigerate 18-20 hours. Watch the time - over-brining will leave your turkey much too salty. Cook turkey as directed by Grandma.
